An alternative method for the delivery of citrus oils is an emulsion system.In contrast to an extract,which removes most of the terpenes from the flavor,an emulsion enables the reten-tion and delivery of all citrus oil components.The other signif-icant difference is that whereas an extract system will typical y cut clear in the finished product,an emulsion will impart cloud-iness to the beverage.Depending on the request of the end user,a cloudy product may be desired.Emulsifying agents such as gums and/or starches are added to water,mixed,and allowed to fully hydrate.Next,flavor oils(e.g.,lemon oil)are combined with approved weighting agents to adjust and increase their spe-cific gravity as close as possible to that of the final beverage in which the emulsion is intended for use.The oil phase is then added to the water phase,and the system is mixed vigorously and homogenized until a target oil droplet particle size is reached (usually around 1 micron).Preservatives are added during the process to achieve micro-stability of the flavor emulsion.The intensity of cloud in the finished product can usually be adjusted to deliver a preferred level of opacity.
