The average protein content of quinoa seed is 12%-23%,higher than those of barley(11%),rice(7.5%)and corn(13.4%),equivalent to that of wheat(15.4%)[22].Water soluble protein and salt soluble protein account for 28.7%-36.2%and 28.9%-32.9%of total protein,respectively,and there is almost no alcoholsoluble protein.BV(biological valence)is a biological method for evaluating nutritional value of protein,which refers to the quality of protein per 100 g of food source converted into human proteins.The BV of quinoa is far superior to corn,wheat,soybean and other corps(Tab.1)[26],only second to rice.True protein digestibility(TD)and net protein utilization(NPU)of quinoa are significantly higher than other grains[23-25].
