The EA of the EPS is measured by its capacity to maintain a hydrocarbon emulsion in water.An eff ective emulsifi er should have the ability to keep at least 50%of the primal volume of an emulsion for 24 h after formation[29].After 1,7,and 15 days,emulsions of dextran solution(1 mg/m L)and sunfl ower oil were compared for their stability,and the results are presented in Table 1.The dextran produced by strain N21 possessed an EA of 66.7%after 1 h,and a slight decrease to 63.4%was observed at 24 h.The same trend could be observed with locust gum,guar gum,and a purifi ed EPS from Lactobacillus kefi ranofaciens,revealing an EA of 65.46,37.47,and 84.12%,respectively,after 1 h[30].Although the activity decreased slightly after 7 and15 days of storage to 62.73%and 62.72%,respectively,the decrease in emulsion stability was not signifi cant after 24 h.The EPS from Bifi dobacterium longum CCUG 52486 andNCIMB 702205 could maintain emulsifying stability for 7days at a temperature of 25°C with sunfl ower seed oil[31].Compared with other EPSs,the one in this study was a more eff ective emulsifi er.
