《Factors affecting the adoption of on-farm milk safety measures in Northern China-An examination from the perspective of farm size and production type》

Questionnaire information includes family characteristics,cow raising behavior,raw milk production,selling and quality check,cow health and disease treatment,feed purchasing,herd structure and feed input,crop production,family income and spending,farmers’cognition,and government regulation.As raw milk safety is the focus in this study,we measured and collected milk safety practices from“Good Agricultural Practices Part 8:Dairy Control Points and Compliance Criteria”(China GAP,for short).It has detailed standard measures and corresponding levels for different components of the production process,which were divided into three levels.Control measures at the first level are based on all food safety requirements of HACCP and animal welfare directly related to milk safety.Control measures at the second level are based on the requirements of environmental protection,employee benefits and animal welfare requirements for the first level.Control measures at the third level are a requirement for continuous improvement of environmental protection,employee benefits and animal welfare based on the first and second level.Since we focused on raw milk safety,we selected control measures at the first level as the standard measures for raw milk safety.We further consulted with China GAP accrediting agencies,dairy scholars,experts from the China Dairy Association,dairy farmers,farm managers and veterinarians.Finally,we identified 34 raw milk safety measures(Table 1).We divided34 normative measures into 5 components:cow health(6measures),cow raising environment(6 measures),milk hygiene(9 measures),milk storage hygiene(6 measures)and information record(7 measures).For each measure,we followed the original GAP information in order to keep consistency,asked about the time and money invested in the implementation of the measure,and then converted time into money based on the average part time income earned by the villagers.
