《Study on the Effect of Enzymolysis Condition on the Browning of Chinese Chestnut Serosity》
Optimization of enzymatic process According to the results of single factor tests,enzymolysis time(min),enzymolysis temperature(℃)and amount of enzyme(U/g)were selected as evaluation factors,and with the browning degree of Chinese chestnut as response value,three-factor three-level response surface method analysis were designed with Design-Expert.The test results were analyzed,and the factors and levels are shown in Table 1.
