《Effect of Ultra-high Pressure Treatment on the Quality of Persimmon Pulp》

As shown in Table 1,the values of L*,a*,and b*after ultra-high pressure treatment were greater than those of the control,indicating that ultra-high pressure treat-ment could brighten the color of persimmon pulp,making the color of pulp closer to the yellowish red when the persimmon was ripe.Regarding the change of color difference,the value of total color differenceΔE of the ultra-high pressure treatments(excepting the treatments at 600 MPa for 10 and 20 min)was all smaller than 2.According to the colorimetric principle of Francis et al[31],whenΔE≤2,the change in color is not visually noticeable.It showed that the ultra-high pressure treatment had little effect on the color of persimmon pulp,and it could keep the color of persimmon pulp well.
