Total carbohydrates is an important indicator of vegetable quality.The content of total carbohydrates could influence the taste,flavor and nutritive value of vegetables.In comparison with the controls,the total carbohydrates of the cucumbers,eggplants,and water spinach under foliar fertilization increased by 0.15,0.51 and 0.11 g/100g respectively(Fig.1).The increments were 12.00%,22.30%and 12.10%respectively.The increment of the eggplants topped the chart,and the T tests of all three vegetables indicated significant differences(P<0.05).It proves that amino acid foliar fertilizer is conducive to the accumulation of total carbohydrates in vegetables like cucumbers,eggplants,and water spinach.Foliar fertilization can help improve the taste,flavor and nutrients of vegetables.
